Grapefruit Garlic Scape Dressing

I am, like my little buddy garlic scape.

 

Garlic Scapes, are a sign of early summer, and amazing dressings to come, in my kitchen. Garlic scapes, though they look crazy, are the flower bud trying to grow out of hard neck varieties of garlic. (knowledge is power)

They taste like garlic, but less intense. I have made the best freaking salad dressing, I am obsessed with it right now. it is beyond simple to make, just throw everything into a blender, and it will jazz up any salad.

Making your own salad dressing is outrageously cheaper than buying store bought, and on the plus side this one is vegan, and a zillion times better for you, with no sugar or preservatives. This is also what we like to call a no-brainer. Just saying.

What You Need:

6 garlic scapes

juice of 1/2 a grapefruit

2 tablespoons of maple syrup

1 tablespoon red wine vinegar

1/4 teaspoon salt

1/4 cup olive oil

 

What You Do:

1. Put everything into a blender or food processor, except the olive oil, blend.

2. Once everything is blended, add the olive oil and blend again, this will thicken up the dressing.

3. Store in an air-tight container in the fridge
